Chef Roa began his culinary journey at the prestigious Cosmopolitan Market Place, assuming his first major role as a Chef. There, he meticulously refined his skills in menu development and adeptly led a passionate kitchen team.

Chicago's vibrant food scene beckoned, and Chef Roa answered the call. His tenure with Bravo Restaurant Group and later at Bar Siena showcased his flair for innovation. Crafting recipes that danced on diners' palates while maintaining impeccable kitchen management.

Expanding his horizons, Chef Roa provided diverse dining experiences. From high-profile clients to professional sports teams—including the Chicago Blackhawks, MLB, and NBA—he orchestrated memorable culinary moments. His attention to detail and commitment to excellence set him apart.

Chef Roa's financial acumen shone. At Hotel Zachary, he deftly reduced food and labor costs without compromising quality. His leadership uplifted the kitchen brigade, fostering a harmonious and efficient environment.

The pandemic posed challenges, but Chef Roa's resilience prevailed. As Executive Sous Chef, he navigated the reopening of Nico Osteria under stringent Covid-19 protocols. His adaptability and unwavering dedication ensured a safe and exceptional dining experience.

Thriving in his role, Chef Roa contributed to the R&D culinary team, collaborating on a new food program that elevated Restoration Hardware's offerings.

Today, as Executive Chef at Omni Hotel, Chef Roa leads with precision. His menus dazzle, combining creativity and precision. Staff training and guest satisfaction remain at the heart of his culinary vision.
