In summer 2016, Omni celebrated The Magic of Maple as part of our annual Art of Water poolside menu. From Memorial Day through Labor Day, Omni brought this ingredient into the spotlight through a number of offerings, including the maple-infused poolside food and beverage menu, a soothing and aromatic maple spa facial and a maple hotel package.
For a true maple immersion, a select group of chefs from Omni’s accomplished culinary team traveled to Vermont and Québec—two of the highest maple producing regions in North America—for a week-long education and tasting experience. During the trip, the team toured various sugar woods, sugar houses, production facilities and distilleries, and discussed the natural sweetener’s past, present and future.

ART OF WATER MENU
The cocktail portion of the menu was divided into five regions—Southeast, Northeast, Midwest, Western and Texas—each featuring local and unique maple-infused cocktails.
Featured Cocktail
Maple Smash
Ingredients:
2 oz Crown Royal Rye
Half a lemon, cut into quarters
1 oz dark, robust maple syrup
5 mint leaves
Garnish: mint sprig
In a cocktail shaker, muddle the lemon quarters with the mint leaves and maple syrup. Add the Crown Royal Rye. Top with ice and shake vigorously. Pour into cup. Garnish with mint sprig.

To pair with the cocktails, a selection of maple-infused appetizers, sandwiches, salads and desserts will were offered on the poolside menu. Executive Chefs Daven Wardynski (Omni Amelia Island Plantation Resort) and André Natera (Omni Barton Creek Resort & Spa) created dishes such as Sweet Corn Fritters with maple-bacon jam, Maple Glazed Salmon Sandwich and Maple Cinnamon Donut Holes.
