In 2015, Omni Hotels & Resorts celebrated its annual "Flavors of the World" culinary series with ¡Destinación Chile! We partnered with Wines of Chile to create a Chilean dinner and bar menu paired with hand-selected wines that reflect our enchantment with the region. The promotion was available at properties across the U.S. from October 1 through December 31, 2015.
Our menu featured unique Chilean fare, from traditional favorites such as empanadas and choritos (spicy steamed mussels), to sweets such as tres leches cake and arroz con leche, all prepared by Omni’s expert chefs. Guests were invited to savor wines from the vast and varied growing regions of the country. Wine selections consisted of favorites such as Cabernet Sauvignon, Pinot Noir, Syrah, Sauvignon Blanc, Chardonnay, and Riesling; and new discoveries like Carmenere. Wines were available by the bottle and in 6- or 9-ounce pours.

Taste Chile at Home
Milcao is a traditional Chilean dish, made of raw grated potatoes and cooked mashed potatoes. Similar to a potato pancake, this side dish can easily bring some Chilean authenticity to your kitchen.

- 1 tsp ground black pepper
|

Bake half of the potatoes and remove the pulp. Grate the other half and squeeze out all moisture. Sauté onions and garlic in melted lard until tender and translucent. Season with cumin, salt and pepper. Combine onion mixture with cooked and raw potatoes. Divide into 1.5 oz patties and chill well. Saute patties over medium heat until gold brown. Serve 3 per portion with Avocado Pebre and drizzle with Chilean olive oil to finish. Garnish with cilantro leaves.
